The student will acquire basic knowledge from the field of human nutrition, its evaluation and impact on human health built on the foundations of natural sciences with a focus on gastronomy, especially on a general understanding of the processes occurring in food and dishes during the production and storage. This knowledge is further broaden primarily on the specifics of restaurant and hotel services, the basics of social interaction, legislation and food product expertise. The student will gain practical experience by completing mandatory professional practice in public catering establishments and other entities dealing with gastronomy and human nutrition. In this way, the student acquires a comprehensive set of competencies (both theoretical and practical) for the subsequent performance of his or her profession. The study is concluded with the defence of the bachelor's thesis and the state final exam.

Study

A graduate of the professionally oriented Gastronomy and Nutrition study programme possess basic knowledge and skills in the area of properties of food raw materials and factors influencing the process of production, processing, storage, distribution and sale of food and meals. The graduate masters the issue of the principles of good production and hygienic practice at all levels of production, processing, serving and sale of food and beverages. The graduate is competent to manage and control the preparation and production of food, to evaluate their quality after preparation, during delivery, or during storage. He or she is able to apply gentle procedures of the preparation of food, dishes and ready meals, including the latest preparation technologies. He or she practically applies criteria and procedures for entry, inter-operational and output control of food, meals and ready meals. It is independent in the management, decision-making and control processes in the field of operation of gastronomic facilities and hotel management, compiles product and service calculations, concludes contracts for the supply of domestic raw materials, products and goods with a guarantee of quality, freshness and safety. Closely related to the field of gastronomy is the field of human nutrition, in which the graduate is able to determine, evaluate and describe the current eating habits of the consumer and propose a change in eating habits to achieve a healthy lifestyle. The graduate has knowledge in the field of legislation and legal regulations in gastronomy and food industry which completes his profile and facilitates application on the labour market.
